I found this one difficult, but I guess that I would go with Arlene and Jen that it would be adapting. It is not just an excuse to learn Paint, so it goes a little beyond literacy, but it is not really part of the learning task, but almost an add-on for those who have finished their work.
Having been in the regular classroom for 22 years, I appreciate the complexities of teaching today. For the last three years I have been a Certified eMINTS Trainer/Mentor and my job is to coach teachers in using inquiry-based teaching in a technology-rich environment. Working with 19 different school districts is a challenging job, but one I look forward to every day.

Jen- I also think it would fall under adapting because it is using technology in a new way yet it is just replacing illustrating by hand.
Adapting since it's their origional story but are using technology 'twek', change their story.

I think you have made some good points...same activity, but done differently because of technology.
